Bomb-licous Breakfast Burritos

Looking for something to make tomorrow morning for Saturday brunch?  Try these yummy, healthy breakfast burritos!  One of my favorite creations and a staple to help mix up my morning meal options.  Today I choose  onions and spinach for my vegetables, but you can use any of choice. It’s a great way to eat those in your fridge that are ready to go bad and start you day off with some added nutrition!

1-2 eggs (depending on how hungry you are)

Spinach

Tomatoes

Salsa

Cheese (of course I didn’t include this, but I could, I would! so you should)

Avocado

Turkey Bacon

Brown rice tortilla (great gluten free option from Trader Joes)

Here is a picture of all the ingredients.  You can do any vegetables of choice

Saute spinach and onions for a few minutes.  Once they’re soft, but not fully cooked, add the egg and scramble

In a separate pan, heat tortilla.  Add cheese and remove from heat when melted

Cook bacon in microwave or on the stove to desired crisp (I like mine really crispy!)

Put scramble and bacon on tortilla. Add salsa and avocado for some extra taste!  Enjoy 🙂
