Easy and Healthy Dinner

An easy go to for a healthy dinner is Quinoa and broccoli.  Cook the quinoa in chicken broth for added flavor (1 cup quinoa, 2 cups broth).  Let it boil, then cover and simmer till all the broth has evaporated.  Stir in some slivers almonds for extra protein!  Like cooking rice. For the broccoli, pre-heat the oven to 425.  Cut up the broccoli or buy pre cut.  Toss it all in bowl with olive oil.  Then add some chopped up garlic.  Spread it out on a cookie sheet and bake at 425 for about 15 minutes, or your desire of crunchy-ness.  Add butter, salt, and pepper, and enjoy!
