GF Pumpkin Flaxseed Muffins

This past week I was craving a festive treat in honor of November; specifically pumpkin, craisins, and walnuts.  So, I decided to put them all together in a gluten free muffin!  The base of my recipe was from The Detoxinista.  I modified to recipe to add flaxseed, craisins, and walnuts.  I also took out the chocolate chips to keep them low on sugar.  These muffins are actually HEALTHY!  They are grain-free, low on sugar, and full of protein!

Pumpkin Flaxseed Muffins with Craisins and Walnuts

Here is what you need….

1 cup almond butter

1/2 cup pumpkin puree (I use Trader Joe’s organic pumpkin)

2 eggs

1/2 teaspoon baking soda

1/4 teaspoon sea salt

2 teaspoons cinnamon

1/2 teaspoon ginger

1/4 teaspoon nutmeg

1/3 cup honey

1 tablespoon maple syrup

Mix all of these ingredients together in a large bowl, then add and mix in…

1/3 cup craisins

1/4 ground flaxseed

1/4 cup chopped walnuts

Bake at 350 for 15-20 minutes, till the top of the muffins are golden and slightly cracked.  I know they’ll smell amazing and you’ll want to dig in, but let them cool for 15 minutes before serving.

      Hi Health Without Sacrifice! Thanks for asking! These yield 10-12 muffins, depending on how deep you fill the muffin trays. My batch made 11. Enjoy and let me know what you think!
