Veggie + Sausage Pasta

One of my favorite foods: PASTA!  With red sauce, pesto, olive oil…whatever!  I love pasta.  It’s a staple in my diet.  I buy Gluten Free BROWN RICE Pasta.  I think it is better than corn and quinoa gluten free noodles.  I tend to make pasta creations.  Here is my most recent.  I was quite satisfied, considering that it is GlUTEN and DAIRY Free.

Ingredients:

Brown rice pasta

chicken Sausage

Bell pepper, onions, tomatoes

arugula

salt and pepper

Olive Oil

Directions:

-Boil water and cook noodles

-Cut sausage into bite sizes.  Heat olive oil on the pan and start cooking the sausage.

-Chop up veggies.  Cut stems off the Arugula.

-Add veggies to the  saucepan.  When veggies are almost doing cooking, add Arugula.  Be careful not to ad it too early to keep it from wilting.  It cooks like spinach.

-When pasta is done, drain and add to sauce pan.  Add more olive oil, salt, and pepper to your liking.  If you can dairy, add Parmesan cheese.

 

Left overs are great too–even cold.  Makes a good pasta salad for lunch at work.
